Amazing No Tomato Creamy Pasta Sauce
This recipe has a unique twist to the traditional pasta sauce, but it retains the deep, flavorful characteristics that make pasta so loveable.
Ingredients
- 1 large onion, chop finely
- 4 cloves of garlic, minced
- 2 carrots, chopped finely
- 2 Stems celery, chop finely
- 1 Cup of red bell pepper, chop finely
- 2 tbls olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- A pinch of red pepper flakes (optional)
- 2 cups chicken or vegetable broth
- 1⁄4 Cup fresh basil, chop finely
- salt and pepper to taste
- 500 gms of your favorite pasta

Begin by heating the olive oil in a large pan over medium heat. Then, add in your finely chopped onion, allowing it to simmer until it becomes translucent. Here's something I've learned from experience: taking the time to really cook down your onions will allow for a more robust flavor.
Then, toss in your minced garlic, diced red bell pepper, celery, and carrots. Stir the mixture until these components soften. This may take around 8-10 minutes. Remember, the trick is to maintain a balance – you don't want your veggies to be too mushy.
Once the vegetables have softened, sprinkle in your dried basil, oregano, and red pepper flakes. I have always found that adding the dried herbs at this stage, directly to the heat, deepens the flavor.
Now, pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and allow it to simmer for 15 minutes, until the liquid has somewhat reduced. Along the way, be sure to taste and add salt and pepper as needed.
While the sauce is simmering, this would be a good time to boil your pasta. Make sure to follow the instructions for your particular pasta type to avoid overcooking.
Finally, once the sauce has reduced and the pasta is drained, combine them in the pan, coating the pasta thoroughly. I like to finish it off with the fresh basil for a burst of that fresh, aromatic flavor.
