Artichoke Soup
A healthy and tasty artichoke soup, perfect as an appetizer or a light dinner dish.

- 8 unit artichokes
- 1 unit white onion
- 1 unit Medium potato
- 1 liter vegetable broth
- 50 grams butter
- 50 grams grated parmigiano reggiano
- salt and pepper

1. Step
Clean the artichokes and leave them in water with lemon so they do not blacken.
2. Step
In the meantime, slice the onion and sauté it in a casserole with butter.
3. Step
Add the artichokes and diced potatoes, sauté for a few minutes, then cover with vegetable broth.
4. Step
Cook over medium heat for about 30 minutes or until the artichokes and potatoes are soft.
5. Step
Remove from heat and blend with an immersion blender until you get a smooth cream.
6. Step
Add the grated Parmesan, mix well and adjust for salt and pepper.
7. Step
Serve the artichoke velouté hot, with a drizzle of extra virgin olive oil and a sprinkle of Parmesan.
