Directions
Combine the minced garlic, soy sauce, brown sugar, ground cumin, ground coriander and turmeric powder. Mix well to make the marinade.
Cut the chicken breasts into thin strips. Put into a ziplock bag and pour the marinade over. Make sure the chicken is well coated. Marinate for at least 2 hours, overnight for best results.
Meanwhile, prepare the peanut sauce by combining peanut butter, soy sauce, honey, lime juice, minced garlic, and red pepper flakes in a bowl. Gradually add water and whisk until the sauce reaches a smooth, pourable consistency. Set aside.
Heat your grill or grill pan over medium-high heat. Put the chicken pieces onto the skewers.
Cook the chicken skewers for about 3-4 minutes per side, or until they are cooked through and slightly charred. Be careful not to overcook them.
Once cooked, remove the chicken skewers from the grill and let them rest for a few minutes. Garnish with freshly chopped cilantro.
Serve the Chicken Satay with warm peanut sauce, lime wedges, and cooked white rice. Enjoy!
