Ingredients
Chicken and marinade
- 500 g boneless chicken thigh
- 4 tablespoon coconut milk
- 1 teaspoon curry powder
- 1 teaspoon Chilli powder Or paprika powder
- 1⁄2 teaspoon turmeric
- 1 teaspoon salt
- 1 tablespoon Grated or finely chopped lemongrass
Curry Sauce
- 4 spring onion
- 3 cloves garlic
- 1 tablespoon grated lemongrass
- 3 tablespoon peanut butter
- 350 g coconut milk
- 1⁄2 teaspoon turmeric
- 1 teaspoon Chilli Powder
- 1 tablespoon curry powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 Cup water
- 3 tablespoon vegetable oil
To Serve
- Roasted crushed peanut
- Hot green chilli or birdeye chilli
- coriander
- lime wedges

Directions
Begin by cutting the chicken into medium-sized pieces. Season with a blend of coconut milk, turmeric, chilli powder, curry powder, salt, and lemongrass. Mix the ingredients thoroughly, set the seasoned chicken aside, and allow it to marinate for an hour or overnight.

Heat a grill pan over medium-high heat. Drizzle one tablespoon of oil and fry the chicken for 3 minutes on each side. Set it aside and keep it warm.

In another pan, heat 3 tablespoons of oil over medium heat. Add the onions and saute them until they become translucent. Follow up with the chopped garlic and lemongrass and continue cooking until the onions start to brown slightly.

Add the seasonings - turmeric, chilli powder, and curry powder - and cook for a few seconds.

Pour in the coconut milk, water, and peanut butter, and season with salt and sugar. Stir the mixture thoroughly and bring it to a simmer.

Add the grilled chicken pieces back into the curry sauce and cook over low-medium heat for 10 minutes until the chicken is fully cooked.
