Authentic Satay Sauce Chicken with Noodles

- 500 gms of boneless chicken breasts, cut into strips
- 250 gms of dry noodles (your choice, though udon or rice noodles work well)
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- salt and pepper to taste
For Satay Sauce:
- 1⁄2 Cup of smooth peanut butter
- 0.3 Cup of water
- 2 tbls soy sauce
- 2 tbls With
- 2 teaspoons Sriracha sauce (optional)
- Juice of half a lime

Directions
Start by cooking the noodles according to the packet instructions. Once cooked, drain and set aside.
While the noodles are cooking, make the satay sauce. Combine the peanut butter, water, soy sauce, honey, Sriracha sauce, and lime juice in a bowl and mix until smooth. Set aside.
Marinate the chicken strips with salt, pepper, and half of the satay sauce for about 10-15 minutes.
Heat the vegetable oil in a large pan over medium heat. Saute the onion and garlic until they begin to soften.
Add the marinated chicken to the pan, and cook until it is no longer pink inside, about 6-8 minutes.
Pour the remaining satay sauce over the chicken, stirring to coat the chicken evenly.
Add the cooked noodles to the pan and toss everything together so the noodles are coated in the sauce and combined with the chicken.
Serve hot. For an added crunch, sprinkle some chopped peanuts on top before serving.
