Authentic West African Jollof Rice
Jollof Rice is a popular West African dish made from rice, vegetables, and flavorful spices. The dish is known for its vibrant reddish-orange color and is a staple at celebrations and gatherings.
Ingredients
- 2 cups of long-grain rice
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon tomato paste
- 2 large tomatoes, diced
- 1 bell pepper, diced
- 2 scotch bonnet peppers, chopped
- 1 teaspoon of smoked paprika
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 2 bay leaves
- 4 cups of chicken broth
- 1⁄4 Cup of vegetable oil
- Salt and freshly ground black pepper to taste

Directions
Rinse the rice in cold water until the water runs clear. Drain and set aside.
In a large pot, heat the vegetable oil over medium heat.
Add the onions and garlic to the pot and sauté for 2-3 minutes until the onions become translucent.
4 Add the diced tomatoes, bell pepper, and scotch bonnet peppers. Stir well and cook for 4-5 minutes until the vegetables soften.
Add the tomato paste, smoked paprika, thyme, curry powder, bay leaves, salt, and black pepper to the pot. Stir well and cook for 2-3 minutes.
Add the rice to the pot and stir well so that the rice is coated with the vegetable and spice mixture.
Add the chicken broth to the pot and stir well. Bring the mixture to a boil.
Reduce the heat to low and cover the pot with a tightly fitting lid. Cook for 25-30 minutes until the rice is cooked and the liquid has been absorbed.
Remove the bay leaves from the pot and fluff the rice with a fork.
Serve hot with your choice of protein or enjoy as a vegetarian meal.
