Basic Spicy Indian Spiced Potatoes
This simple yet flavorful dish has been cooked and perfected by my family over generations. It pairs well with a simple dal or a curd-based raita.
Ingredients
- 4 larger potatoes
- 2 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon Red Chili Powder
- 2 teaspoon coriander powder
- salt to taste
- 2 tablespoon vegetable oil
- Freshly chopped coriander leaves for garnish

Start by boiling the potatoes. While you can boil the potatoes whole, I find it's quicker to chop them into cubes before boiling - it hastens the cooking process.
Once the potatoes are tender and well-cooked, drain the water and let them cool down. Peel the potatoes unless you prefer them with the skin on - the skin adds a nice texture.
In a large pan, heat the oil over medium heat. Add in the cumin seeds and let them sizzle a bit. Be careful not to burn these, burnt cumin seeds can add a bitter taste.
Now add turmeric powder, red chili powder, and coriander powder to the oil. Keep the heat low while adding spices, else they might burn and alter the flavor.
Quickly add in your boiled potatoes and sprinkle salt to taste. Mix well until all the potatoes are covered in the spice mixture. This ensures even flavor distribution.
Let them cook for a few more minutes until the potatoes absorb all the delicious spices.
Garnish with freshly chopped coriander leaves before serving. The garnishing not only adds a pop of color but also freshness to the overall dish.
