Ingredients
- 1 Cup lentils
- 1 onion
- 3 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 coriander seeds
- 1⁄2 teaspoon turmeric powder
- 1⁄2 teaspoon cayenne pepper
- 1⁄2 teaspoon salt
- 2 cups water
- 1 tablespoon olive oil
- 1 tablespoon fresh cilantro leaves, chopped (for garnish)

Directions
Rinse the lentils well and place them in a large pot with water. Add onion, garlic, cumin seeds, coriander seeds, turmeric, cayenne pepper, and salt. Bring to a boil over high heat.
Once boiling, turn down heat to medium-low and simmer for 20-25 minutes or until lentils are tender and most of the liquid has been absorbed.
In a separate pan, heat the olive oil over medium heat. Once hot, move the lentil mixture to the pan and stir.
Garnish with fresh cilantro leaves and serve hot with rice or naan bread.
