Best Vanilla Passion Fruit Layer Cake

Ingredients
For the Cake:
- 2 cups crystal sugar
- 1 Cup unsalted butter, softened
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 Cup milk
- 1 tablespoon pure vanilla extract
- Pulp of three passion fruits
For the Frosting:
- 1 Cup unsalted butter, softened
- 4 cups powdered sugar
- Pulp of two passion fruits

Directions
Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time until well incorporated.
In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this to the butter mixture alternating with milk, beginning and ending with the flour mixture. Stir in the vanilla and passion fruit pulp.
Divide the batter evenly among the prepared pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow cakes to cool in the pans for 10 minutes, then remove and place onto wire racks to cool completely.
While the cakes cool, prepare the frosting by beating the butter until creamy. Gradely add the powdered sugar, beating until light and fluffy. Stir in the passion fruit pulp.
Once the cakes are completely cooled, spread frosting on top of one layer, then add the second layer and frost it, then add the third layer and frost the top and sides of the cake. Serve and enjoy!
