Blueberry Cheesecake
Famously easy, no-bake blueberry cheesecake ready in no time‼️ Full of antioxidants and fibre thanks to blueberries 😍🤤🫐‼️
Ingredients
Foundation
- 100 g butter biscuits
- 50 g butter
Blueberry broth
- 200 g I used wild frozen blueberries
- 3 spoons Sugar if you prefer sweeter you can add
- 1 lemon juice
- 30 ml Of water
- 2 spoons corn starch
Cream
- 500 g Spreadable curd cheese
- 100 g white chocolate
- 2 spoons Bilberry compote
- 200 ml 40 percent whipped cream
- pinch real vanilla

Diameter of the form: 18 cm
We blend the cookies together with the melted butter and smooth it on the bottom of the mold, lined with baking paper.
Boil the blueberries with sugar and lemon juice. (If you have fresh ones, it's good to crush them a little and add 1-2 tablespoons of water. )
Mix them together and return back to the pot. Remove 2 spoons for the cream!
Mix cornstarch (2 teaspoons) in 30 ml of water and add it to the blended blueberries. Briefly let it simmer and allow it to cool slightly.
Whisk the curd and cream, add 2 tablespoons of blueberry compote, vanilla and melted white chocolate.
Smooth the cream into the mold and carefully pour in the blueberry mixture.
