Braised Wild Boar Loin

Wild boar back

  • 112 kg Wild boar back Added to

Soße

  • 2 tbsp butter Added to

  • 500 ml red wine Added to
  • 500 ml Game stock Added to
  • 1 TL rosemary Added to

1. Step

To prepare the wild boar back, preheat your oven to 160°C. Rub the wild boar back with olive oil, salt and pepper. Sear it in a pan over high heat until it is brown on all sides. Place the meat in a casserole dish.

2. Step

Melt the butter in the same pan. Add the garlic and onion and sauté them until they are soft. Add the red wine and cook it on high heat for 5 minutes to reduce the alcohol. Add the game stock, rosemary and thyme, and let the sauce simmer for 10 minutes.

3. Step

Pour the sauce over the wild boar back. Cover the casserole dish and put it in the oven for 2 hours until the meat is tender. Let the meat rest for 10 minutes before serving.
