Chicken broth
A traditional slow-cooked chicken broth that is perfect for Sunday lunch.
Ingredients
- 1 a piece Whole hen
- 3 a piece carrots
- 2 a piece onion
- 2 Cloves garlic
- 1 a piece celery stalks
- 1 a piece parsley
- salt and pepper to taste
- 21⁄2 l Waters

Directions
Wash the hen thoroughly and place it in a large pot. Pour water into it and bring to the boil, stirring constantly.
Add sliced carrots, chopped onion, garlic cloves, celery and parsley. Mix everything thoroughly and add salt, pepper, bay leaf and allspice. Remember that the bay leaf and allspice add an intense aroma and flavour to the broth, so don't overdo it.
Cover the pot and let it cook slowly over low heat for about 3 hours. This is one of my secrets for perfectly balanced flavor - if the broth is slow cooked, all the flavors and aromas from the chicken and vegetables are released.
After three hours, strain the broth. You can serve it alone or with noodles or vegetables.
