Chicken Satay Stir Fry
This is a delicious and easy stir-fry recipe that combines tender chicken, crisp vegetables, and a rich satay sauce. It's perfect for a quick and satisfying weeknight dinner.

- 500 g chicken breast, sliced
- 2 peppers
- 1 onion
- 1 Cup snow peas
- 1⁄4 Cup vegetable oil
- 1⁄4 Cup peanut butter
- 1⁄4 Cup soy sauce
- 1 tablespoon With
- 1 tablespoon ginger, grated
- 2 cloves garlic, minced
- 2 tablespoon lime juice
- Salt & pepper to taste

Directions
Heat the oil in a large wok or frying pan over high heat.
Add the chicken and stir fry for 3-4 minutes, until browned on all sides.
Add the peppers, onion, and snow peas, and continue to stir for another 3-4 minutes, until crisp.
In a small bowl, combine the peanut butter, soy sauce, honey, ginger, garlic, lime juice, red pepper flakes, salt, and pepper.
Pour the satay sauce over the chicken and vegetables, and stir until everything is coated.
Cook for an additional 2-3 minutes, until the sauce has thickened and the chicken is fully cooked.
Serve hot with steamed rice or noodles.
