Chicken soup with noodles
This chicken soup with noodles like mom used to make is a dish that evokes deep emotional memories. The soup, which was often our lunch when I came home from school, still has the flavor of my childhood. Over the years, I have added my own variations and tweaks to it, but the essence of the recipe remains the same as my mother's original.
Ingredients
- 1 medium size Chicken
- 2 carrots
- 2 celery stalks
- 1 large onion
- 3 cloves of garlic
- salt and black pepper to taste
- 2 l water
- A handful of fresh parsley
- 100 g small pasta

For the chicken soup recipe, start by washing the chicken thoroughly and then place it in a large pot. Pour the water over the chicken. The water should completely cover the chicken. Turn the heat to high and bring to the boil.
While the water is boiling, peel the carrots, celery, onion and garlic. Cut everything into coarse pieces - they don't have to be too small, as they are mainly used to flavor the broth. And leave the onion in the middle, it will add a wonderful flavor.
Once the water is boiling, drop in the vegetables and spices. Reduce the heat to low and leave the soup to simmer for about an hour and a half - this step is absolutely crucial for a rich, full chicken soup stock.
Once the soup has boiled, remove the chicken and allow it to cool slightly. The meat should now separate easily from the bone. Cut the chicken into smaller pieces and put back into the pot.
Now it is time to add the noodles to the chicken soup. Leave the chicken soup to simmer for another 15 minutes until the noodles are cooked. Garnish with the chopped parsley before serving.
