Directions
Start by preparing the meat by cleaning it and cutting it into thin slices. It is important that the slices are of equal thickness so that they cook evenly.
Salt and pepper the meat on all sides. Then brush them with the mustard. Depending on the saltiness of the mustard, add salt and pepper. Make sure it is not too salty!
Crush the garlic and mix with the sour cream. This garlic and cream mixture will make the meat really tasty and juicy.
Toss the meat slices in the prepared sour cream mixture to coat them well. Leave to stand in the fridge for as long as possible, but at least 1 hour.
Preheat the oven to 180°C.
Heat the oil in a heatproof pan. Add the meat and fry both sides until golden brown.
Once both sides are cooked, place them in the oven for another 20-30 minutes. It's important to keep an eye on the texture of the meat so that it doesn't overcook and become dry!
When ready, sprinkle with fresh parsley.
