Classic Fresh Authentic Israeli Vegetable Salad
Israeli Salad is a traditional dish from the Middle East that is refreshing, nutritious, and easy to prepare. Best served alongside grilled meats or in a pita, it contains finely chopped fresh vegetables, herbs, and a simple lemon-olive oil dressing.
Ingredients
- 4 ripe tomatoes
- 1 large cucumber
- 1 large bell pepper
- 1 small red onion
- 1⁄2 Cup Chopped fresh parsley
- juice from one lemon
- 2 tablespoon olive oil
- salt and pepper to taste

Directions
Start by washing and drying all the vegetables and herbs.
Finely dice the tomatoes, cucumber, bell pepper, and red onion. The smaller the pieces, the better.
Toss the chopped vegetables into a large bowl.
Add the chopped fresh parsley to the bowl.
To make the dressing, squeeze the juice of one lemon into a small bowl, add the olive oil, salt, and pepper and whisk until well combined.
Dress the salad with the lemon-olive oil and toss until all the ingredients are well coated.
Taste and adjust the seasoning if necessary.
Let the salad sit in the fridge for at least 30 minutes before serving to allow flavors to mesh together.
