1. Step

In a large mixing bowl, combine the ground sausage, garlic, parsley, thyme, sage, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2. Step

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

3. Step

Roll out the puff pastry sheets onto a lightly flour surface. Cut the pastry into six equal rectangles.

4. Step

Take a portion of the sausage mixture and shape it into a log the length of one pastry rectangle. Place the sausage log onto the pastry and roll up. Close with a bit of water if needed. Repeat this process for remaining pastry rectangles.

Brush the tops of the sausage rolls with the beaten egg to create a golden crust when baked. Sprinkle sesame seeds (if desired) over the egg wash for added flavor and presentation.

Transfer the sausage rolls onto the sheet, leaving some space between each to allow even baking.

Bake in the preheated oven for approximately 20 minutes, or until the pastry turns golden brown and crispy. Make sure the sausage is fully cooked and no longer pink in the center.
