Delicious Christmas Pancake Tower
This Christmas pancake has become a delicious tradition in my house during the holidays. The flavors of cinnamon, ginger and nutmeg really evoke the Christmas spirit, while the addition of red fruits adds a festive touch to the dish. Be sure to prepare the dough well in advance, so that the flavors have time to develop properly. You have time to enjoy the preparation, while your house fills with the magical smells of Christmas.
Ingredients
- 2 mugs of flour
- 2 teaspoons Of baking powder
- 1⁄2 cdta of baking soda
- 1⁄4 cdta Of salt
- 1 cdta powdered ginger
- 11⁄2 teaspoons cinnamon
- 1⁄4 cdta of ground nutmeg
- 4 Eggs
- 2 mugs of milk
- 1⁄2 mug sugar
- 1 cdta Vanilla extract
- 2 mugs Of red fruits (strawberries, raspberries, blueberries)

Directions
In a large bowl, combine the flour, baking powder, baking soda, salt, ginger, cinnamon and nutmeg. Be sure to sift the dry ingredients well, this helps make the pancakes fluffy.
In another bowl, beat the eggs and then add the milk, sugar and vanilla extract. A useful tip is to add the sugar a little at a time while whisking, to make sure it dissolves properly.
Add the flour mixture to the egg mixture in equal parts, beating well after each addition. Let the dough rest for about 30 minutes to allow the flavors to blend and the baking soda to work.
Heat a skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Stack the pancakes on a warm plate and add a little whipped cream on top of each one. Garnish with the berries and serve hot.
