Directions
Peel and finely chop the onion and garlic cloves. Doing this patiently ensures a soft and tasty sofrito.
Pour a little olive oil in the Thermomix - about two tablespoons - and add the garlic and onion. Program 5 minutes, 100° speed 1. I recommend opening occasionally to stir and avoid burning.
Add the peas to the Thermomix along with the vegetable stock. The option of frozen peas is fantastic for this recipe, as they do not need to be thawed and are usually cheaper.
Program 20 minutes, 100°, speed 1.
Once the time is up, check if the peas are well cooked, if not, add a couple of minutes more. Be sure to check the seasoning, you can add salt and pepper to taste at this point.
Finally, program 2 minutes at progressive speed 5-10 to obtain a smooth and creamy texture.
Serve your cream of pea soup hot. I personally enjoy serving it with some toasted rustic bread to give a crunchy touch to the meal.
