Directions
To prepare the broth, place the bones in a large pot with the water. Bring it to a boil and simmer for 1 hour. During this time, it is important to remove the residues that will float in the water, this will ensure a clean and clear broth.
Add garlic, onion, celery, bay leaves and ginger to the broth. Cook everything together for another 30 minutes. This is where the broth comes alive and soaks in all the flavors.
Meanwhile, in a frying pan, cook the pork with a little sesame oil until well browned. Season with a little soy sauce.
For the eggs, boil them for 7 minutes to obtain a slightly liquid center, then immerse them in cold water to stop the cooking process. Then peel them carefully. A trick is to do it under a stream of cold water; this makes it easier to remove the eggshell.
Strain the broth and set aside. Cook the ramen noodles in the broth according to package directions, usually no more than 5 minutes.
Serve the ramen in large bowls, add the broth, place the pork and a halved egg to each bowl. Add a little soy sauce and additional sesame oil to taste.
Finally, garnish with scallions and green chilies to taste.
