Delicious Stuffed Pasta
Stuffed pasta is one of my favorites because it offers a curious mix of textures and flavors. It is a very versatile dish, going from the softness of the ricotta cheese to the special touch of spinach. It is a dish to enjoy with the family and it takes time to prepare, offering me a moment of creativity and relaxation.
Ingredients
- 250 grams Of stuffed pasta of your choice (cannelloni, lasagna tortellini...etc.)
- 300 grams of fresh spinach
- 250 grams Ricotta cheese
- 1 onion
- 500 grams of tomato sauce
- olive oil
- salt and pepper
- grated mozzarella
- parmesan

Directions
Pre-heat the oven to 180°C. This temperature is ideal for the pasta to be al dente during baking.
Prepare the pasta according to package directions. Remember not to overcook, as it becomes soft in the oven.
In a large frying pan, pour a dash of olive oil and sauté the previously chopped onion and garlic. I usually do it over medium heat to prevent them from burning and acquiring a bitter taste.
Add the spinach and sauté until cooked. Season with salt and pepper to taste.
Once the spinach is ready, add the ricotta cheese and stir well until everything is integrated. This will be the filling for your pasta.
Fill the pasta with the spinach and ricotta mixture. A dessert spoon is an effective tool for this.
In a baking dish, pour the tomato sauce, making sure to cover the entire base. Then place the stuffed pasta on top.
Sprinkle with grated mozzarella and Parmesan cheese and bake for 20-25 minutes, until golden brown.
Serve hot and garnish with parsley or basil if desired. Your guests will be delighted with the mix of flavors.
