Dried pea soup
Recipe for a delicate creamy pea soup made from dried yellow peas.
Ingredients
- 500 g dry peas
- 1 a piece onion
- 3 cloves garlic
- 2 a piece carrots
- 1 a piece parsley
- 100 g smoked bacon
- 11⁄2 l Waters
- salt
- black pepper

Directions
Place the peas in a large saucepan, cover with water and leave to soak overnight. Soaked peas cook faster and are easier to digest.
The next day, pour off the water and rinse the peas. Put them back in the pot, cover with 1,5 l of water and start cooking.
In the meantime, fry the chopped onion in a frying pan and later add the finely chopped garlic and bacon. Let fry briefly.
Add this mixture to the pot with the peas. Add the chopped carrots and parsley.
Cook over medium heat for about 1 hour, until the peas are completely tender. Add water as needed.
If we want a smooth soup, we can blend it with an immersion blender at this point.
Season with salt and pepper and let simmer for a while to combine the flavours.
