Easy Healthy Apple and Rhubarb Crumble
This classic blend of apple and rhubarb is always my go-to.
Ingredients
For the filling:
- 4 large green apples, peeled and diced into pieces
- 500 gms of rhubarb, chopped into pieces
- 1⁄2 Cup of sugar
- 1 teaspoon of Vanilla Extract
- 2 tbls of water
For the crumble:
- 1 Cup of flour
- 1 Cup of rolled oats
- 1⁄2 Cup of brown sugar
- 100 gms of unsalted butter, melted
- 1 teaspoon of cinnamon

Preheat your oven to 180℃ (350℉). I've found that slightly lower temperatures can leave the crumble undercooked and higher can burn quickly. So stick to the suggested temperature for the best results.
Combine apples, rhubarb, sugar, vanilla extract, and water in a large pot. Let this mixture simmer over medium heat until the fruits are tender. This may take about 15-20 minutes.
While the fruit is cooking, prepare your crumble. Combine flour, oats, brown sugar, melted butter, and cinnamon in a bowl. Mix until everything clumps together. You are looking for a sand-like texture, not too dry or wet.
Once the fruit is ready, pour it into a baking dish. Spread the crumble mixture over the top evenly. Distributing it as uniformly as possible allows it to cook evenly and you will get a great crunchy texture.
Bake the crumble in the oven for about 30-35 minutes or until the crumble top is golden brown. From experience, the crumble tends to brown quickly; keep your eye on it after the 20-minute mark to prevent it from burning.
Once done, let it cool for about 10 minutes before serving. This dish pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
