- 1 Cup water
- 1 Cup Red Vinegar
- 1 fresh chilli
- dill
- anise
- bay leaf
- 1 ginger seed
- 1 tablespoon salt
- 2 tablespoon sugar

1. Step
Toast seeds and aromatics in a pot, add liquids, salt, sugar, bay leaf, and ginger.

Cut the watermelon rind into slices, leaving a little of the white pulp.
3. Step
Cut the chilli into very fine julienne strips, mix with the watermelon rind, season and take it to a clean jar.

Add the broth straight from the fire. Fill to the top, cover and leave to cool. Close with a lid.

Leave to rest for at least a day before tasting, so that the aromatic pickle takes effect. Enjoy!
