- Fresh parsley
- 3 cloves garlic

- lemon juice
- 1 tablespoon Extra Virgin Olive Oil

In a bowl add the butter, chopped parsley, chopped garlic, 1 tbsp extra virgin olive oil, and the juice and zest of 1 lemon. Mix well and set aside.

Season the turkey with salt and pepper, inside and outside. then, fill it with onions, lemon and bay leaves. Tie the legs together with food-grade string.

Peel the skin off the meat. Then put the reserved butter on the inside and outside of the skin.

Preheat the oven to 220 °C. At the moment of placing the turkey, lower the temperature to 180 °C. Bake for 2 and a half hours, basting the turkey every 30 minutes with the juices that drip into the tray.
