Greek Spinach Pie Spanakopita Recipe
Spanakopita is a popular Greek savory pastry dish that combines a filling of chopped spinach, feta cheese, onions, egg and seasoning, enveloped in crispy, flaky phyllo dough. This recipe makes for a perfect appetizer or a light vegetarian meal that can be enjoyed any time of the day.
Ingredients
- 2 lb fresh spinach
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1⁄2 Cup olive oil
- 2 eggs, lightly beaten
- 1⁄2 Cup Ricotta cheese
- 1 Cup crumbled feta cheese
- 10 letters phyllo dough
- 1⁄2 Cup unsalted butter, melted

Directions
Preheat your oven to 350°F (175°C).
Rinse the spinach and chop them finely. Set aside.
In a skillet over medium heat, sauté the onions and garlic in olive oil until soft and lightly browned.
Add the spinach to the skillet, mixing it in with the onions and garlic. Cook until the spinach is wilted, about 5 minutes.
In a large bowl, combine the spinach mixture with the eggs, ricotta cheese, and feta cheese. Mix well.
Brush a baking dish with some of the melted butter. Lay a sheet of phyllo dough in the dish, and brush with more butter. Repeat with half the sheets of phyllo.
Spread the spinach and cheese mixture over the phyllo layers.
Layer the remaining sheets on top of the spinach mixture, brushing each with butter.
Tuck in any overlapping edges and brush the top with the remaining butter.
Bake in the preheated oven for about 40-45 minutes, or until the pie crust is golden brown. Let it cool before cutting into squares to serve.
