Healthy cauliflower couscous
This cauliflower couscous is a delight to the palate, I love its simplicity and the versatility it offers. It is a creative way to take advantage of the nutritional benefits of cauliflower and is an excellent choice for those trying to reduce carbohydrate intake. I have prepared this dish several times and it is always a hit, the cauliflower gets a light and soft texture similar to couscous and absorbs the flavors of the olive oil, garlic and fresh herbs beautifully.
Ingredients
- 1 head cauliflower
- 2 cdas of olive oil
- 2 cloves minced garlic
- salt and pepper to taste
- A bunch of chopped fresh parsley
- juice of half a lemon

Wash the cauliflower and cut into pieces.
Grate the cauliflower or chop it in a food processor until it has a couscous-like consistency. Believe me, using a food processor, although not necessary, will make the process much easier.
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until golden brown. This step is crucial to release the full flavor of the garlic.
Add the shredded cauliflower to the pan, season with salt and pepper to taste. Cook for 5-7 minutes, making sure to stir frequently to prevent sticking to the bottom of the pan.
Once the cauliflower is soft, remove the pan from the heat and add the fresh parsley and lemon juice. By doing this, you get an explosion of flavor that makes the dish simply delicious.
