Healthy Oven Baked Fully Loaded Sweet Potatoes

Ingredients
- 4 Medium-sized Sweet potatoes
- 4 slices bacon
- 2 cups chopped assorted vegetables (like bell peppers, onions broccoli)
- 2 tbls olive oil
- salt and pepper to taste
- 1 Cup grated Cheddar cheese
- 1⁄2 Cup sour cream
- 2 green onions, chopped

Preheat your oven to 400°F (200°C), then pierce the sweet potatoes with a fork multiple times and bake in the preheated oven for about 45 minutes, or until they are cooked through and tender.
While the sweet potatoes are baking, cook the bacon in a pan over medium heat until crispy, and then set aside. In the same pan using the bacon drippings, sauté the assorted vegetables with olive oil and season with salt and pepper to taste. Cook until the vegetables are tender.
Once the sweet potatoes are done, allow them to cool and then slice the tops off. Scoop out some of the flesh from the center to make a “boat”.
Fill the sweet potato \boats\ with the sautéed vegetables, then top each one with cheese and crumbled bacon.
Place them back in the oven until the cheese is melted and bubbly.
Remove from the oven, top each potato with a dollop of sour cream and a sprinkle of green onions. Serve warm and enjoy your loaded sweet potatoes!
