Homemade Barbeque Peri Peri Chicken Bake
Peri Peri Chicken is an African bbq chicken recipe that is juicy, spicy, and so flavourful. The succulent grill marks on a hearty spicy chicken served with a slice of lime is the perfect main dish that is incredibly easy to make and full of flavour, thanks to the homemade peri peri marinade.
Ingredients
- 4 Chicken quarters or whole chicken cut into pieces
- 4 tablespoon Peri Peri sauce
- 4 cloves of garlic
- 1 red bell pepper, chopped
- 1 teaspoon paprika
- 1 teaspoon oregano
- 2 teaspoon cayenne pepper
- Juice of two lemons
- 1⁄2 Cup olive oil
- salt to taste
- 2 limes, cut into wedges for serving

Start by making the marinade. Combine Peri-Peri sauce, garlic, red bell pepper, paprika, oregano, cayenne pepper, lemon juice, olive oil, and salt in a blender or food processor. Blend until smooth.
Place the chicken in a large bowl or resealable plastic bag. Use a knife to make a few slashes in the chicken pieces, this will allow the marinade to penetrate more deeply. Pour in the Peri Peri marinade, ensuring that the chicken is coated thoroughly.
Let the chicken marinate for at least an hour, or ideally, overnight in the refrigerator.
Preheat your grill or barbecue to medium-high heat. Grill each side of the chicken for about 20-30 minutes or until fully cooked, turning occasionally. If you prefer, you can also bake the chicken at 190°C/375°F for about 45 minutes, or until the juices run clear.
Serve the Peri Peri chicken hot with lime wedges on the side. This dish pairs wonderfully with rustic bread, salad, or roasted vegetables.
