- 7 kg turkey
- 10 l water
- 10 tablespoon salt
- 2 tablespoon ground pepper
- 1 tablespoon cumin
- 1 tablespoon dried oregano
- 1⁄2 spoon Chinese cinnamon
- 4 tablespoon red chilli paste
- 2 tablespoon yellow chilli paste
- 3⁄4 Cup black beer
- 8 tablespoon soy sauce
- 3 tablespoon mashed garlic
- 3 tablespoon oil
Stuffing
- 300 g tenderloin or steak
- 1 onion
- 1⁄2 Cup sultanas
- 1⁄2 Cup grapes
- 2 apple
- 1 spoon oregano
- 1 tablespoon Chopped parsley
- 1 carrot
- 4 stalks celery
- 3 sprigs rosemary
- 2 sprigs parsley
- 2 leaves bay
- 3 tablespoon butter

Directions
Dilute 10 tbsp of salt in 10 litres of water, place the turkey and refrigerate it for 4 hours.

In a bowl, add ground pepper, cumin powder, red chilli paste, yellow chilli paste, Chinese cinnamon, dried oregano, soy sauce, black beer, and smashed garlic. Mix together and set aside.

Rinse turkey and place on a large platter or in a large bowl, baste with dressing and spread all over. Refrigerate overnight.

In a frying pan, add oil and finely chopped loin or steak. Then, brown for 5 minutes with salt and pepper. Set aside.

Add oil, diced red onion and smashed garlic. Fry for 5 minutes.

Add sultanas and raisins, dried oregano, diced apples and butter. Cook for 5 minutes. Add finely chopped parsley, set aside and leave to cool.

In a roasting pan, add diced carrot, diced leek, diced celery stalks, sprigs of parsley, sprigs of rosemary and bay leaves. Place the marinated turkey on top of all the vegetables. Stuff the turkey, securing the legs with kitchen string.

Coat skin with room-temperature butter. Add remaining turkey dressing. Cover with foil and bake in the oven at 200°C for 3 hours.

Remove foil, baste with cooking juices and cook at 220°C for at least 30 minutes.
