Directions
Begin by peeling your cucumber. With years of practice under my belt, I recommend using a vegetable peeler for the smoothest, most consistent strips.
After peeling, finely grate the cucumber and place it in a medium bowl.
Add half a cup of Greek yogurt to the bowl. Over the years, I've discovered that Greek yogurt gives a tangy flavor that’s unbeatable, but feel free to swap in sour cream if you prefer a richer, creamier taste.
Now, mix in the freshly chopped dill, white wine vinegar, and minced garlic. No need for store-bought dressing with additives, this healthier version with fresh herbs represents home cooking at its best!
This is the point where you personalize your cucumber dressing. Add salt and pepper to your liking. Don't overshoot the salt initially, add gradually tasting as you go, as the saltiness can intensify over time.
Stir in a tablespoon of olive oil. This gives your dressing a silky, glossy finish and enriches the flavor profile, making the dressing all the more enjoyable.
Your cucumber dressing is almost ready. Allow the magic to happen by letting it sit in the fridge for an hour to meld flavors. Though I often rush this step when short on time, letting the dressing rest really makes difference.
Give it one last good stir before serving and enjoy your Homemade Cucumber Dressing!
