How to make Easy Homemade Marshmallow Fluff
Marshmallow fluff, also known as marshmallow creme, is a spreadable, marshmallow-like substance that is light, fluffy, and sweet. This homemade version of the store-bought staple is simple to make and uses just a few common ingredients. You may never return to the store-bought version after tasting the homemade one. Perfect to use on hot chocolate, brownies, and cookies, or as a filling for whoopie pies and s’mores.
Ingredients
- 4 egg whites
- 2 cups of sugar
- 0.125 teaspoon cream of tartar
- 1 teaspoon vanilla extract

Directions
Combine the egg whites, sugar, and cream of tartar in the top portion of a double boiler. The mixture should be above 1-inch of boiling water.
Cook the mixture, consistently whisking, until it reaches 160°F or until the sugar is completely dissolved.
Then, remove the mixture from the heat.
Using a mixer, whip on high speed until it’s stiff and glossy, about 6 to 7 minutes. Make sure not to over-beat, as the fluff can become grainy.
Add the vanilla extract in the last minute or so of beating.
Let the mixture cool then store in an airtight container in the refrigerator for up to 2 weeks.
