Ingredients
For the Biscuit Base
- 600 g Wheat flour
- 400 g butter
- 200 g icing sugar
- 1 egg
- 21⁄2 g salt
- 20 ml milk
- 60 g corn starch
- 5 g soy lecithin
- 71⁄2 ml butter flavouring
For the Filling
- 370 g cream cheese
- 220 g sugar
- 50 g instant custard powder
- 250 g whipped cream
- 20 g unflavored jelly
- 100 ml water
- 15 ml liquid cherry flavouring
- 2 g citric acid
Garnish
- figs
- raspberries
- blackberries
- pine sprigs

Directions
Lightly cream the butter together with the soy lecithin.

Sift the dry ingredients together, add to the mixer and mix on low speed until a sandy consistency is obtained.

Add all other ingredients and continue mixing on low speed until a firm, homogenous dough is obtained. Remove the dough from the mixer, wrap it in cling film and refrigerate for 24 hours.

Roll out the pastry to a thickness of half a centimetre, line a tart tin and cut off the excess. Then, bake at 170ºC for 20 minutes. Flatten gently with a fondant smoother when the biscuit comes out of the oven and leave to cool.

Mix the cheese with the sugar until smooth. Then, add the whipping cream and the custard powder.

Add the liquid cherry flavouring and mix and hydrate with the unflavored jelly together with the citric acid in the water, leave to set and then melt in the microwave and integrate as a thread to the previous mixture.

Pour the mixture into the biscuit base, even out and leave to set in the refrigerator for 3 hours.
