Ingredients
- 1 lb of fresh squid, cleaned and cut into rings
- 1 Cup all-purpose flour
- 2 large eggs, beaten
- 1 Cup breadcrumbs
- salt to taste
- Pepper to taste
- 1⁄2 teaspoon cayenne pepper (optional)
- Grated zest of one lemon
- Vegetable oil for deep frying
- lemon wedges for serving

Start by seasoning your cleaned squid rings with salt, lemon zest, and a bit of cayenne pepper (if using).
Then, prepare three bowls: One with the all-purpose flour, one with the beaten eggs, and one with breadcrumbs.
Now dip each squid ring first in the flour, then the egg, and finally coat thoroughly with the bread crumbs.
Heat the vegetable oil in a deep pan or a deep fryer to around 375°F (190°C). You'll need enough oil to fully submerge the calamari.
Fry your coated calamari rings in batches, for 2-3 minutes or until golden brown. Avoid overcrowding to ensure each piece cooks evenly.
Use a slotted spoon to remove the calamari from the oil and drain on a paper towel-lined plate.
Finish with a sprinkle of salt while still hot, and serve with lemon wedges and the dipping sauce of your choice.
