Directions
Start by preheating your grill or pan over medium-high heat, which helps to achieve that perfect sear on your burgers that restaurant chefs always talk about. I've found that cast iron works great for this purpose.
In a large mixing bowl, blend the ground beef and chorizo sausage together. Just use your hands, making sure you mix until the chorizo and beef are well combined but, don't overwork the meat as it can result in tough burgers.
Season your mixture with salt and black pepper and then divide the meat into four even portions. Mold these portions into burger patty shapes.
Grease the grill or pan using olive oil, and then place the patties on it. Allow them to cook for about 5 minutes per side, or until they are cooked to your preferred level of doneness. Cooking chorizo a little longer helps to render out its fat – this really amps up the overall flavor.
About a minute before the patties are done, top each of them with a slice of cheese and allow it to melt, it brings an extra layer of creamy goodness to the burgers.
Finally, assemble your burgers. Spread some sauce of your choice on the toasted burger buns, then load them up with lettuce, a tomato slice, the melted cheese-topped chorizo-beef patty, and lastly the top bun. And there you go, your Chorizo Burger is ready to go!
