Directions
To bake Nutella cookies, start by preparing the butter - it should be soft to combine more easily with the other ingredients. I find that it helps to take the butter out of the fridge an hour before baking.
In a large bowl, mix the butter, sugar and salt until creamy.
Add the egg and continue beating until it is fully incorporated into the mixture.
In a separate bowl, mix the flour and baking powder. This step is important for an even distribution of the baking powder, resulting in perfectly risen cookies.
Add the flour mixture to the butter mixture and knead everything into a smooth dough.
Wrap the dough in cling film and leave to rest in the fridge for about 30 minutes. This resting time makes the dough firmer and easier to work with.
Roll out the dough and cut out the cookies. I like to use different shapes to make baking a bit more fun.
Place the cookies on a baking tray lined with baking paper and bake at 180°C (top/bottom heat) for about 10 minutes.
Once baked, leave the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely. Now it's time for the best part: the decorating! Melt the Nutella in the microwave and brush the cookies with it. Then leave to cool.
I'm sure you'll love these Nutella cookies. Have fun baking them!
