Old-Fashioned Chicken and Biscuits Bake

Ingredients
- 1 whole Chicken, cut into pieces
- 2 cups mixed vegetables (carrots, peas corn)
- 1 large onion, chopped
- 4 cups chicken broth
- 1 Cup all-purpose flour
- 1⁄2 Cup unsalted butter
- salt and pepper to taste
- 2 cups Biscuit Mix
- 0.6 Cup milk
- Fresh parsley, for garnish

Preheat your oven to 350°F (175°C).
In a large pot, add chicken, onion, mixed vegetables, salt, pepper, and chicken broth. Simmer until the chicken is cooked through, approximately 45 minutes.
Once cooked, remove the chicken pieces from the pot and let them cool. Once cool, remove and discard the skin and bones, then shred the meat and keep aside.
Keep the pot of vegetables and broth on heat. In a separate pan, melt the butter and add flour, whisking continuously until a smooth roux is formed.
Slowly add this roux into the simmering broth, stirring continuously until it thickens into a gravy.
Stir the shredded chicken back into the pot. Taste the mixture and adjust seasoning if necessary.
Pour this chicken gravy mixture into a baking dish.
In a separate bowl, mix the biscuit mix and milk to form a soft dough. Drop spoonfuls of the dough on top of the chicken mixture in the baking dish.
Bake in the preheated oven for about 30 minutes, or until the biscuits are golden brown on top.
Remove from oven, allow to cool slightly and garnish with fresh parsley. Your Chicken and Biscuits is ready to serve!
