Old-Fashioned Deep Fried Pineapple Ring Fritters
This crunchy, sweet and tangy delight is a great dessert or an anytime snack. It is a terrific way to add a tropical twist to your day. Our pineapple fritters are deep fried to golden perfection and sprinkled with powdered sugar for an irresistible finish. They are easy to make and are sure to be a hit with family and friends.
Ingredients
- 1 large ripe pineapple
- 1 Cup all-purpose flour
- 1⁄2 Cup maize starch
- 1⁄2 teaspoon baking powder
- A pinch of salt
- 1 Cup ice-cold water
- 2 tbls sugar
- 2 cups Vegetable oil for frying
- 1⁄4 Cup confectioner's sugar for dusting

Directions
Start by peeling your pineapple and cutting it into 1/2 inch thick rounds. Remove the core from each round.
In a large bowl, combine your flour, cornstarch, baking powder, sugar, and salt. Add the ice-cold water to these dry ingredients and mix until smooth. Your batter should be thick but also able to run off a spoon.
Heat your vegetable oil in a deep fryer or a deep pan to 375 degrees F (190 degrees C).
Dip each pineapple ring into the batter, ensuring it is completely covered.
Carefully place the batter-covered pineapple into the hot oil. Fry until golden brown on both sides. Remember to flip the fritters halfway through frying.
Once done, use a slotted spoon to remove the fritters from the oil and place them on a plate lined with a paper towel to drain the excess oil.
Dust each pineapple fritter with some confectioner's sugar.
