Directions
To make the dough for the onion tart tray recipe, first put the flour in a bowl. Make a well in the center, crumble the yeast into it and knead a smooth dough with salt and lukewarm water. Add a pinch of salt and knead well. Let the dough rise, covered, in a warm place for about 1 hour, until it has visibly increased in size.
In the meantime, for the topping, peel the onions and cut into fine rings. Cut the bacon (if using) into small cubes. Fry both together in a large pan until the onions are translucent.
Reduce the heat and whisk the eggs with the sour cream. Season with salt, pepper and a pinch of nutmeg. Pour over the contents of the pan and stir well. Spread evenly over the dough.
Preheat the oven to 200 degrees. Bake the onion cake in the preheated oven for about 35-40 minutes until the surface is golden brown. If the surface browns too quickly, the cake can be covered with aluminum foil.
Remove the finished onion tart from the oven on the tray and allow to cool slightly before cutting into pieces. This way the flavors combine optimally.
