Oven-Baked Cheese Potato & Eggs Frittata
The Potato Frittata is a classic Italian dish, perfect for breakfast or brunch but excellent for dinner as well. It’s hearty yet light with a soft center boasting with flavors. Cooked potatoes are mixed with beaten eggs, baked until fluffy, and decorated with herbs. It’s inviting, delicious, filling and easy to prepare!
Ingredients
- 5 large eggs
- 2 medium potatoes, peeled and thinly sliced
- 1 finely chopped medium onion
- 1⁄2 Cup of grated Parmesan cheese
- 1⁄2 Cup of milk
- 2 tbls of olive oil
- salt and pepper to taste
- Fresh chopped parsley for garnish

Directions
Preheat oven to 375°F (190°C).
Heat 2 tablespoons of olive oil in an oven-safe skillet over a medium heat.
Add the chopped onions to the skillet and sauté until they become translucent.
Add the thinly sliced potatoes to the skillet and cook until they are golden brown. Season with salt and pepper.
In a bowl, beat the eggs and add milk to it, whisking both together.
Pour in the cheese into the egg mixture and stir until well mixed.
Pour the egg mixture over the potatoes and onions in the skillet, ensuring it covers them evenly. Continue to cook without stirring for about 5 minutes, until the edges are set.
Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the centre of the frittata is set.
Remove from the oven and let it cool for a few minutes before slicing.
Garnish with fresh chopped parsley and serve warm.
