Preheat your oven to 400°F (200°C), an optimal temperature to ensure your salmon is cooked thoroughly without getting too dry.

While the oven preheats, arrange your fresh salmon fillets in a baking dish and drizzle them with olive oil. This not only adds flavor but helps to keep the salmon moist.

Sprinkle the fillets with salt and black pepper, remembering that a little can go a long way.

Zest the lemon and sprinkle it liberally over the fillets. Cut the lemon in half and squeeze one half over the salmon. It’s a good idea to save a little lemon juice to drizzle over the cooked fish for an extra punch of acidity.
