Pear, Walnut, Parmesan and Rocket Salad
This Pear and Rocket Salad is one of my favorite recipes to prepare when I want something light, refreshing, and packed with flavors.
Ingredients
- 4 cups of rocket (arugula)
- 2 ripe pears, thinly sliced
- 1⁄2 Cup of walnuts, chopped
- 1⁄2 Cup of parmesan cheese, shaved
- 1⁄4 Cup of olive oil
- juice from one lemon
- Salt and freshly ground black pepper to taste

Start with the dressing. In a small bowl, mix the olive oil and lemon juice. Add salt and pepper to your liking. I recommend using fresh lemon juice for its brighter flavor, and a good-quality olive oil which makes a significant difference in taste.
Now, let's prepare the salad. Start by arranging the rocket on a large dish. Then, lay out the pear slices on top. I prefer to use ripe but firm pears as they have a sweet taste that counteracts the peppery rocket taste, and their crispiness adds an interesting texture.
Sprinkle the chopped walnuts and parmesan cheese over the pears and rocket. I find that toasting the walnuts a bit before adding them imparts a richer flavor and crunch to the salad.
Drizzle your dressing over the arranged salad. You should not pour too much dressing at once; it's better to serve some on the side so that everyone can add as per their preference.
Toss gently before serving. The salad should be served immediately after dressing to prevent the rocket from wilting.
