Perfect Moist Flourless Orange Cake

Ingredients
- 4 large oranges
- 6 eggs
- 1 Cup sugar
- 2 cups almond flour
- 1 teaspoon baking soda

Directions
Preheat oven to 180°C.
Wash the oranges and place them in a saucepan with enough water to cover them. Bring to a boil, then reduce the heat and simmer for 1 hour, until the oranges are soft. Drain and let cool.
Cut up the oranges and remove any seeds. Place them in a food processor or blender and pulse until you have a smooth puree.
In a separate bowl, beat the eggs and sugar together until light and fluffy.
Add the almond flour, baking powder, and orange puree to the egg mixture and stir until well combined.
Pour the batter into a greased 9-inch cake pan and bake for 40-45 minutes, until golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Dust the top of the cake with powdered sugar before serving.
