Plum sauce for meat is excellent with grilled or roasted meat. It is light, slightly sour and full of flavour.

1. Step

Start by washing your plums and removing the stones. If you use compote plums, be sure to drain them beforehand. In a jug, blend the plums to a fine puree. It is absolutely essential to follow this step, as this is how you achieve the right texture for the sauce.

2. Step

Then heat the butter in a frying pan and sauté the chopped onion in it. Then add the flour and stir until it combines with the butter and onion into a smooth roux.

3. Step

Now add a cup of water to the pan and stir in the plum puree. Bring to the boil and let it bubble on a low heat for about 15 minutes. The sauce should thicken.

4. Step

Season the sauce with salt, pepper, sugar and lemon juice. Finally, stir in the cream. I recommend tasting the sauce during cooking and adding seasoning as needed. After all, we all have different taste buds.

5. Step

And the sauce is ready. All that's left is to serve it with your favourite meat. My personal recommendation is grilled chicken breast marinated in herbs, but the plum sauce goes well with other meats too. Enjoy!
