Quick lunch pasta with vegetables and tuna
One of my favorite recipes for a quick and delicious lunch is this pasta. The combination of fresh vegetables, tuna and delicious spices makes it a real treat. Plus, it's pretty easy and quick to make, which is perfect if you don't have much time.
Ingredients
- 500 g Pasta (spaghetti, penne or whatever you have to hand)
- 2 cloves of garlic
- 1 red paprika
- 1 zucchini
- 1 onion
- 1 Can Tuna in water
- 2 Tablespoon olive oil
- salt and pepper to taste
- 1 Teaspoon oregano
- 100 g parmesan
- Fresh parsley to decorate

Cook the pasta according to the instructions on the packaging. A little tip: add a pinch of salt and a splash of olive oil to the cooking water to prevent the pasta from sticking together and make it tastier.
While the pasta is cooking, prepare the vegetables. Peel and finely dice the garlic and onion. Also wash the peppers and zucchinis and cut into small strips or cubes.
Heat the olive oil in a large pan and add the garlic and onion. Sauté them until they are translucent. Then add the peppers and zucchinis and fry until soft. I find it gives the vegetables a better flavor if you sauté them a little longer. Finally, mix the drained tuna into the vegetables.
Add the vegetables with the tuna to the cooked pasta, add the oregano and season with salt and pepper. Stir to combine everything.
Finally, sprinkle the pasta with vegetables and tuna with grated Parmesan and garnish with some fresh parsley.
