Quick Thermomix Savoury Mini Quiches
What I love about these Thermomix Mini Quiches is their versatility - perfect for a family breakfast, a brunch with friends, or even as appetizers at a party.
Ingredients
- 1 list ready-rolled shortcrust pastry
- 4 eggs
- 1⁄4 Cup heavy cream
- 1⁄2 Cup cheddar cheese, grated
- 1⁄2 onion, finely diced (optional)
- 1⁄2 Cup diced cooked ham
- 1⁄2 Cup baby spinach, finely chopped
- Salt and pepper, to taste

Preheat your oven to 180°C (355°F). This optimizes the temperature for baking your mini quiches to a perfect golden brown.
Roll out the shortcrust pastry and use a cookie cutter to cut into 12 circles. Press the pastry circles into a non-stick mini muffin tin. I find that a little dusting of flour on the pastry prevents sticking. Allow it to refrigerate for about 15 minutes.
Meanwhile, in your Thermomix, combine eggs, heavy cream, salt, and pepper. Mix on speed 4 for 10 seconds. You shouldn't overmix as maintaining some air in the egg mixture ensures a light, fluffy texture.
Sprinkle cheese, onion, ham, and spinach evenly over the pastry cases. Then, evenly pour the egg mixture over the fillings - a one-quarter inch below the rim works best, as the mixture will puff up slightly as it bakes.
Bake your mini quiches in the preheated oven for about 15-20 minutes, or until the fillings are set and the pastry is golden brown.
Allow them to cool, then carefully remove the quiches from the muffin tin using a butter knife- this will ensure that the pastry doesn't tear or stick.
