Rice Croquettes

Ingredients
- 400 g Rice for risotto
- 100 g grated cheese
- 2 pcs Eggs
- 50 g flour
- 30 g butter
- 50 g breadcrumbs

Cook the rice in boiling salted water until it is al dente, then drain it and let it cool.
In a bowl, mix the rice, eggs, cheese, butter and a handful of grated bread. Stir until the ingredients are well combined.
Shape the rice mixture into balls, then coat them in flour, dip them in beaten egg, and roll them in breadcrumbs.
Fry the croquettes in hot oil until they become golden. Drain them on paper towel to remove the excess oil.
Serve the rice croquettes hot or at room temperature.
