Roasted radicchio side dish vegetarian
As a passionate cook and salad lover, I tried this recipe to expand the variety of my salad combinations. The balance between the slightly bitter taste of the radicchio and the sweetness of the honey brings such a great experience to the plate. The roasted radicchio tastes deliciously crunchy and perfectly complements any main dish.
Ingredients
- 2 Heads radicchio
- 4 Tablespoon olive oil
- salt and pepper to taste
- 2 Tablespoon With
- 2 Tablespoon balsamic vinegar
- 1 zcrushed Garlic clove

To replicate the roasted radicchio recipe first cut the radicchio in half and remove the stalk. Be careful not to over-wash the vegetables or they will draw water and not be as crisp.
Heat a pan with olive oil. Place the radicchio in the pan with the cut side down and fry for about 5 minutes until it starts to brown. In my experience, the radicchio then develops a wonderful aroma.
Turn radicchio, add salt and pepper and fry for another 5 minutes.
In the meantime, finely chop the garlic. Be careful not to add to the pan too soon, otherwise the garlic will burn and develop a bitter taste.
Reduce heat, add the chopped garlic, honey and balsamic vinegar to the radicchio and mix well.
Season the roasted radicchio again and add more salt and pepper as needed.
Serve the roasted radicchio as a side dish with meat dishes or as a main course for a light, healthy dinner. Enjoy your meal!
