Directions
Start by cutting the savoy cabbage into small pieces. This is an important step as smaller pieces shorten the cooking time and make the food more even. Also peel the peppers, onions and potatoes and cut into bite-sized pieces.
Heat the olive oil in a large frying pan before adding the bacon or smoked tofu and fry until crispy. From my experience, it is better to add the bacon now as it adds a wonderful flavor to the whole dish.
Add the onions and fry until they are translucent. Then add the peppers and potatoes and fry for a few minutes. Now add the savoy cabbage and after a few more minutes pour in the vegetable stock.
Allow the savoy cabbage pan to simmer for about 20 minutes until the vegetables are soft. While cooking, add the spices to give the dish extra flavor. I recommend only seasoning with salt and pepper at the end, as the bacon can already be very salty.
Sprinkle the savoy cabbage pan with optional pomegranate seeds at the end.
