Simple Coconut Basmati Rice Recipe

Ingredients
- 1 Cup basmati rice
- 2 cups coconut milk
- 1 Cup water
- 1 teaspoon salt
- 1 tbls vegetable oil
- 2 cloves of garlic, minced
- 1 finely chopped medium onion
- 1 teaspoon cumin seeds
- A pinch of saffron threads (optional)
- Freshly chopped cilantro for garnish

Directions
Rinse the Basmati rice under cold water until the water runs clear. Let the rice drain thoroughly.
In a deep saucepan, heat the vegetable oil over medium heat. Add the cumin seeds and let them splutter.
Add the chopped onions and minced garlic to the pan and sauté until the onions become transparent.
Add the drained rice to the pan and stir until the grains are coated with the oil and slightly toasted.
Pour in the coconut milk, water, and salt. Stir well to combine the ingredients evenly with the rice.
Allow the mixture to come to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 20 minutes, or until the rice is cooked and all the liquid is absorbed.
Once the rice is cooked, fluff it gently with a fork. Add the saffron threads and stir gently to combine (if using).
Garnish the coconut rice with freshly chopped cilantro before serving.
